Chop all the dry fruits and nuts, place them in an airtight container then pour orange juice to it. Cover and keep it in refrigerator for 24 hours.(make sure that all the fruits are soaked well in juice).
Grease cake pan with butter and cover the bottom and sides with parchment paper, keep aside.
Sift together all the dry ingredients like flour, baking powder, salt and all spice powders and keep aside.
In a sauce pan add 1/4 cup of sugar and 2 tbsp water then heat it on medium low flame until it gets nice brown color(Do not touch the pan or stir the sugar).
Once it gets brown color add 1/2 cup of boiling water to it then stir well and cook for 3to4 minutes.Then transfer into a bowl and allow to cool.(be careful while adding water to the caramel, it will splash out).
Separate soaked fruits and juice with a colander.Add 2 tbsp of flour to the soaked fruits and nuts and toss well, this step helps prevent them from sinking to the bottom of the cake while baking.
Powder the sugar and keep aside.
In a large mixing bowl beat butter and sugar until smooth and creamy.
Now add the eggs one by one while beating. Then add vanilla extract, spices,1/4 cup of orange juice, orange zest and caramelized sugar syrup, mix gently.
Add flour little by little to the batter, combine well with spatula. Finally add fruits and nuts and just fold it, don't over mix the batter.
Preheat the oven to 180 degree celcius for 10 minutes.
Pour prepared batter into the greased cake tin and bake for 40 to 50 minutes or until a tooth pick inserted into the center comes out clean.
Take out the cake from the oven and let it completely cool.Delicious fruit cake is ready.Slice and serve Enjoy!!!!!!!!!!!!!!!!!!!!!!.
