Ingredients
- 1 kg Chicken
- 3 cups Basmati rice
- 1 nos Dry lemon
- 3 nos Onion
- 4 nos Tomato
- 1 nos Carrot
- 11/4 tbsps Arabic masala
- 1/2 tsp Turmeric powder
- 2 tbsps Chopped cilantro
- 11/2 tbsp Ginger garlic
- 6 no Green chilly
- 2 small Cinnamon
- 4 nos Cloves
- 5 nos Cardamom pods
- 1/4 tsp Cumin seed
- 1 nos Bay leaves
- 4 tbsps Ghee
- Salt to taste
- 7 cups Hot water
- olive oil for chicken fry
FOR MARINATION:
- 1/2 tsp Chilly powder
- 1/4 tsp Turmeric powder
- 1/4 tsp Arabic masala
- 1/2 tsp Ginger garlic paste

Instructions
- Heat ghee in a deep thick bottom vessel add cumin seed,whole garam masla stir few second then add sliced onion saute until golden brown then add crushed ginger,garlic,chopped tomato, grated carrot,whole green chilly,salt,turmeric powder, 1tbsp chopped cilantro and arabic masala saute for couple of minutes,then add chicken mix well.
- Now add dry lemon and 31/2cups of hot water then cover the pan and cook for 12 minutes.
- Wash and drain the rice keep aside.
- After 12 minutes open the lid and remove the chicken from the vessel then add rice into vessel,add remaining hot water,mix well and cook in high flame.
- When it is boil cover the vessel, reduce flame in low and cook until it is done.
- Marinate the half cooked chicken with chilly powder,turmeric powder,ginger garlic paste and arabic masala.Then shallow fry them in olive oil keep aside.
- Once rice is cooked, place fried chicken top of rice then drizzle 1tsp ghee, sprinkle chopped cilantro on top.majboos is ready to serve.
