Ingredients
FOR BATTER:
- 1 cup All purpose flour(maida)
- 1 no Egg
- Salt to taste
- 1/4 tsp Turmeric powder
- 1/4 tsp cardamom powder
- Water as required
FOR FILLING:
- 11/2 cup Grated coconut
- 7 or 8 tbsps Sugar
- 3 tbsps Water or milk
- 1/4 tsp cardamom powder
- 20 g Cashew nut
- 20 g Raisins
- 11/2 tbsp Ghee

Instructions
- Heat ghee in a pan add cashew stir for few seconds,then add raisins.
- When it is golden brown transfer in a bowl set aside.In the same pan add sugar with water or milk.When sugar is melted add coconut and keep it medium heat.
- When it becomes thick(dry)add fried cashew,raisins and cardamom powder stir for few seconds then remove from fire. Filling is ready.
- Make a batter above mentioned ingredients (batter should be thinner than dosa batter without any lumps).
- Heat a non stick pan (crepes pan) and grease with ghee then pour a ladleful of batter in the centre,spread with the back of the ladle to a thin round.keep medium flame.
- When the crepe is cooked on one side.place it on a plate then take a spoonful of coconut mixture and place it on one end of the crepe,then roll the crepe till the end.Repeat the same with the rest of batter and filling and more crepes.
- Delicious Elanchi / pancake/stuffed crepes is ready! Enjoy!!!!!!!!
