Hi friends,
Today's my recipe is vegetable kurma It is basically a coconut based curry prepared with blended spices and vegetable.This curry is very delicious and popular in kerala which pairs well with porotta,poori,chappati,appam and idiyappam.

Ingredients
- 1 no Potato
- 1 no Carrot
- 6 nos Beans
- 7 florets Cauliflower
- 1 nos Onion
- 1 sprig Curry leaves
- 1 small piece Tomato
- Salt to taste
- 2 tbsps Coconut oil
- 1/4 tsp Mustard seed
- 2 tbsps Chopped cilantro
FOR GRINDING :
- 3 tbsps Grated coconut
- 6 nos Cashew nut
- 1 nos Cardamom pod
- 2 nos Cloves
- 1 inch piece Cinnamon stick
- 1/2 tsp Fennel seeds
- 1/2 tsp Chilly powder
- 1/4 tsp Turmeric powder

Instructions
- Wash and cut vegetables into small pieces and keep aside.
- Grind all the grinding ingredients, make a smooth paste and keep aside.
- Heat coconut oil in a vessel, add mustard seeds let it crackle then add chopped onion and curry leaves, saute until onion is slightly brown.
- Now add chopped tomato and saute till its turn soft,then add vegetables and salt stir well,cover with lid and cook until it is done.
- Now add ground paste stir well,adjust the consistency by adding water as required, then cook in low flame for 10 minutes until goes the raw smell of coconut.
- Finally garnish with chopped cilantro.delicious veg kurma is ready to serve.
