Ingredients
- 2 nos Kaipakka/pavakka
- 5 tbsps Chopped green chilly
- 2 tbsps Chopped ginger
- 2 tbsps Chopped garlic
- 3 sprigs Curry leaves
- 1/4 tsp Mustard seeds
- 3 tbsp Sesame/gingelly oil
- Tamarind pulp a lemon size
- 11/2 tsp Chilly powder
- 1/4 tsp Turmeric powder
- Salt to taste
- 2 Sugar 2 pinch
- 11/2 tbsp Vinegar
- Hot water as required
FOR DRY ROAST:
- 3/4 tsp Fenugreek seeds
- 1 tsp Mustard seeds

Instructions
- Wash the bitter gourd and cut into thin square piece.
- Soak tamarind in warm water and squeeze it.keep aside.
- Dry roast mustard and fenugreek,let it cool grind them fine powder.
- Heat oil in a wok,splutter mustard seeds then add green chilly,ginger,garlic and curry leaves saute until them golden brown.
- Reduce the flame then add chilly powder and turmeric powder saute few second then add tamarind juice,salt,vinegar,sugar and required hot water mix well and allow to boil for 4to 5 minutes.
- Now add bitter gourd pieces stir well.When it is start to boil switch off the flame.
- When it is cool add ground powder mix well.Nadan kaipakka achar is ready.
- You can use it after few hours or next day.Enjoy !!!!!!!!! with rice or rice porridge.

If you are using this pickle more than a week keep refrigerator.
