In a five litre pressure cooker,add milk,50g sugar and 1/2cup of water mix well and allow to boil.(stirring occasionally)
When it start to boil, close the cooker and cook the milk in very low flame for one hour with the whistle.Then switch off the flame and let the pressure settle down.
Wash and drain the ada ,keep aside.
Boil 1/2 ltr water in a sauce pan until it bubbling, then switch off the flame and soak the washed ada in this hot water, cover the pan and keep it aside for 20 minutes.
Drain the ada and rinse 2to3 times under cold water thoroughly to remove all the excess stickiness out of it.Drain and keep aside.
Heat a heavy bottom vessel or uruli (Kerala style kadai used for making payasam)in medium flame, pour one tsp of ghee and add remaining sugar into it then saute until it melts with ghee.
Now add cooked ada into it and roast until light golden and it well coated with sugar and ghee.
Then pour cooked milk ( through a strainer)to ada and continue boiling until it thicken and its colour changes to pale pink. Stirring continuously.( approximately 20 to 25 minutes).Now switch off the flame.
