Today's my recipe is puttu, it is a traditional and most popular break fast dish in kerala.Usually served with kadala curry or papad and small banana. Normlly its prepared with rice flour and coconut, there are many varieties of puttu in Kerala. Ragi putu, godambu puttu, chiratta puttu and erachi puttu etc......
Mix salt into the water and sprinkle this water little by little into the puttu flour and mix well with your hands, make sure there is no dry flour and lumps, all puttu flour should be slightly moisture.
Take a handful of flour and press it between your fist, it should hold in shape, when you press the flour, it should crumble, this consistency is more important to make soft puttu,then add three tbsp grated coconut into puttu flour and mix well with your hands.
Take three cup water in the bottom of puttu maker and boil it, mean while take puttu kutti and place the perforated disk inside the puttu kutti, then add 2tbsps grated coconut at the bottom and add handful of puttu flour on top of it, do not press the flour, just fill it loosely, repeat this until full of puttu kutti, make sure the first and last layer should be coconut.
Close the puttu maker with lid and place it over the puttu maker base, let it cook for 5 minutes or until the steam comes out from the lid, witch off the flame.
Remove the puttu kutti from the base and push the puttu from the kutti with push rod carefully.
Enjoy the puttu with Kadala curry or banana& papad,,,,,,,!!!!!!!!
